Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) and line one or two baking trays with parchment paper to prevent sticking.
  2. Make Cookie Dough: In a large bowl, combine softened unsalted butter and icing sugar. Mix thoroughly until the mixture is smooth and well combined.
  3. Add Flour: Gradually add plain flour to the butter-sugar mixture, stirring until the dough begins to form. It will initially look crumbly but will come together as you mix. Use your hands to shape it roughly into a ball.
  4. Prepare Dough for Rolling: Lightly scatter icing sugar over a clean work surface. Turn the dough out onto the surface and flatten it to about 1 cm (1/2 inch) thickness with your hand. Place a sheet of baking paper on top and use a rolling pin to roll gently to 0.5 cm (1/4 inch) thickness.
  5. Cut Cookies: Use a 6.5 cm (2.5 inch) round cookie cutter to cut out cookie rounds. Transfer the cut cookies carefully to the prepared baking trays using a knife or egg flip. Gather and re-roll the excess dough to cut more cookies; you should get about 16 cookies in total.
  6. Bake: Place the baking trays in the preheated oven and bake the cookies for 15 to 18 minutes until they are pale golden brown and just starting to brown on the edges. Do not worry if they seem slightly undercooked, they will firm up as they cool on the tray.
