Mashed Potato Mixture

Instructions

  1. Prepare the potatoes: Place the peeled and quartered Russet potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat and cook until the potatoes are tender when pierced with a fork, about 15-20 minutes.
  2. Mash the potatoes: Drain the cooked potatoes well and return them to the pot. Add the butter, milk, sour cream, salt, pepper, and garlic powder if using. Mash until smooth and creamy. Adjust seasoning to taste and let the mixture cool slightly so it’s easier to handle.
  3. Form the balls: Once the mashed potatoes have cooled but are still pliable, take about 2 tablespoons of the mixture and shape into small balls, roughly 1 to 1.5 inches in diameter. Place them on a tray or plate.
  4. Prepare the coating station: Set up three shallow bowls: one with the flour, one with the beaten eggs, and one with the panko breadcrumbs.
  5. Coat the potato balls: Roll each potato ball first in flour, then dip into the beaten eggs, and finally coat thoroughly with panko breadcrumbs. Place the coated balls on a plate ready for cooking.
  6. Air fry the potato balls: Preheat your air fryer to 400°F (200°C) for 3-5 minutes.
