- ¼ cup rice wine vinegar
- ¼ cup water
- 2 tablespoons fresh ginger, peeled and chopped
- 2 tablespoons celery, chopped
- 2 tablespoons soy sauce
- 1 tablespoon ketchup (or tomato paste)
- 2 teaspoons sugar
- 2 teaspoons lemon juice
- 1 pinch salt
- 1 pinch pepper
- Combine Ingredients: Add the peanut oil, chopped onion, rice wine vinegar, water, fresh ginger, celery, soy sauce, ketchup, sugar, lemon juice, salt, and pepper to a blender or food processor.
- Blend Until Smooth: Blend all the ingredients for about 45 seconds to 1 minute until the mixture is smooth and emulsified.
- Refrigerate: Transfer the dressing to a container and refrigerate for at least one hour to allow the flavors to meld and develop fully.
- Serve: Drizzle the ginger dressing over your favorite salad or use as a dipping sauce to enjoy its full flavor.
Notes
- Ketchup is used as a convenient substitute for tomato paste with minimal difference in flavor, adding a slight sweetness.
- For best flavor, refrigerate the dressing overnight; it tastes better on the second or third day after mixing.
- Store the dressing in an airtight container in the refrigerator for up to one week.
