  • 4 large eggs, beaten
  • 3/4 cup freshly grated Parmesan cheese, plus more for garnish
  • 1/3 cup freshly chopped parsley, plus more for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.
  2. Cook the Bacon: In a large skillet over medium heat, cook the bacon slices until crispy. Remove bacon with a slotted spoon and place on paper towels to drain. Once cooled, roughly chop the bacon and set aside. Leave about 1 tablespoon of bacon fat in the skillet.
  3. Sauté the Chicken and Garlic: Add the chicken strips to the skillet with the reserved bacon fat. Season with kosher salt and freshly ground black pepper. Cook over medium heat until the chicken is fully cooked and lightly browned, about 5-7 minutes. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Prepare the Sauce: In a medium bowl, whisk together the beaten eggs, grated Parmesan, and chopped parsley until combined.
  5. Combine Pasta and Sauce: Reduce the heat to low. Add the drained fettuccine to the skillet with the chicken and garlic. Slowly pour the egg and Parmesan mixture over the pasta, tossing continuously to create a creamy sauce without scrambling the eggs. Add reserved pasta water a little at a time as needed to reach desired sauce consistency.
  6. Add Bacon and Adjust Seasoning: Stir in the chopped crispy bacon. Taste and adjust seasoning with extra salt, pepper, or Parmesan cheese if desired.
