Instructions

Mix until all crumbs are moistened and evenly combined. Press this mixture firmly into the bottom of a 9-inch springform pan to create an even crust layer. Bake for 10 minutes, then remove from the oven and set aside to cool.
  2. Make the filling: In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until the texture is smooth and creamy, ensuring no lumps remain. Gradually add 1 ¼ cups of granulated sugar and continue beating until fully incorporated. Mix in the sour cream and vanilla extract until blended.
  3. Add eggs and jimmies: Slowly add the eggs one at a time, beating on low speed after each addition just until combined to avoid overmixing, which can cause cracks during baking. Gently fold in the rainbow jimmies or sprinkles to distribute them evenly throughout the batter.
