4.6 from 147 reviews

A delicious and hearty breakfast twist on classic nachos, combining crispy tater tots with savory breakfast sausage, melted sharp cheddar, fresh vegetables, and creamy avocado for a satisfying brunch or breakfast treat.

Ingredients

Scale

Main Ingredients

  • 20 oz bag of tater tots
  • 8 oz breakfast sausage
  • 4 eggs
  • 4 oz Cabot Vermont Sharp Cheddar Cheese, shredded

Toppings

  • 2 green onions, thinly sliced
  • 1 small avocado, diced
  • 6 cherry tomatoes, quartered
  • 2 tbsp sour cream

Instructions

  1. Cook the Tater Tots: Preheat your oven to 425°F (220°C). Spread the tater tots evenly on a baking sheet and bake for 20-25 minutes, turning halfway through, until they are golden and crispy.
  2. Cook the Breakfast Sausage: While the tots bake, heat a skillet over medium heat. Remove the sausage from casing (if applicable) and crumble it into the skillet. Cook until browned and fully cooked, about 7-8 minutes, stirring occasionally.
  3. Scramble the Eggs: In a separate bowl, whisk the eggs. Pour into a non-stick skillet over medium-low heat and cook gently, stirring until soft scrambled and fluffy. Season with salt and pepper to taste.
  4. Assemble the Totchos: Once the tater tots are cooked, transfer them to an oven-safe dish or leave on the baking sheet. Sprinkle the cooked sausage evenly over the tots, then add the shredded sharp cheddar cheese on top.
  5. Melt the Cheese: Place the assembled tots back in the oven for 3-5 minutes until the cheese melts thoroughly.
  6. Add Fresh Toppings: Remove from the oven and top with scrambled eggs, sliced green onions, diced avocado, and quartered cherry tomatoes.
  7. Finish with Sour Cream: Dollop sour cream over the top or serve it on the side for dipping. Serve immediately while warm and enjoy your breakfast totchos.

Notes

  • You can substitute the breakfast sausage with bacon or chorizo for different flavors.
  • For a spicier kick, add sliced jalapeños or a drizzle of hot sauce.
  • Use low-fat sour cream or Greek yogurt for a lighter topping.
  • Make sure to spread tater tots in a single layer on the baking sheet for even crisping.
  • Can be made vegetarian by omitting the sausage and adding sautéed mushrooms or beans.
