  • 12 ounces bag of tortilla chips (Tostitos brand – use about of the bag)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 450°F (232°C). Spray a 12-cup capacity bundt pan generously with cooking spray to prevent sticking and set it aside.
  2. Cook Ground Beef and Onions: In a large skillet over medium-high heat, cook the ground beef with the diced yellow onion, salt, and black pepper for 6 to 7 minutes until the beef is fully browned and there is no pink remaining. Drain any excess fat from the skillet.
  3. Season the Meat: Return the skillet to medium heat and stir in ¼ cup of water along with 2 tablespoons of taco seasoning. Cook for an additional 2 to 3 minutes, allowing most of the liquid to evaporate. Remove the skillet from heat once done.
  4. Layer Cheese and Beef: Into the prepared bundt pan, layer half of the shredded Colby jack cheese at the bottom, followed by half of the cooked beef mixture. Then add about one-third of the tortilla chips on top. Avoid packing the chips down to keep them crispy.
  5. Add Remaining Layers: Layer the remaining shredded cheese over the first chip layer, then add the rest of the ground beef mixture, and top with another one-third of the tortilla chips. Make sure not to overfill the pan to create even layers.
  6. Bake the Nachos: Place the bundt pan in the oven and bake for 10 minutes, allowing the cheese to melt and the layers to meld together.
  7. Invert and Serve: Remove the bundt pan from the oven and carefully place a large, heatproof plate on top of the pan. Invert the pan so that the nachos transfer onto the plate, then carefully remove the bundt pan. Replace any cheese that may have stuck to the pan back onto the nachos.
  8. Garnish: Top the nachos with your choice of optional garnishes such as sour cream, diced tomatoes, and chopped fresh cilantro before serving.
