Ingredients

Scale

Apple Filling

  • 2 apples, peeled and finely chopped
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 1 tbsp unsalted butter

Dough and Assembly

  • 1 can (16.3 oz) refrigerated biscuit dough
  • 8 pieces caramel candy
  • 2 tbsp butter, melted
  • Cinnamon sugar (optional)

Instructions

  1. Prepare the Apple Filling: Heat 1 tbsp of unsalted butter in a skillet over medium heat. Add the finely chopped apples, 2 tbsp brown sugar, 1 tsp ground cinnamon, and a pinch of salt. Cook, stirring occasionally, until the apples are softened and caramelized, about 5-7 minutes. Remove from heat and let cool slightly.
  2. Preheat Oven and Prepare Biscuit Dough: Preheat your oven to 375°F (190°C). Open the can of refrigerated biscuit dough and separate the biscuits. Flatten each biscuit into a roughly 4-inch circle using your hands or a rolling pin.
  3. Assemble the Pie Bombs: Place a spoonful of the cooled apple filling in the center of each flattened biscuit dough circle. Add one piece of caramel candy on top of the filling. Fold the dough over the filling and pinch the edges firmly to seal, forming a closed ball.
  4. Brush with Butter and Add Cinnamon Sugar: Place the sealed dough balls on a baking sheet lined with parchment paper. Brush the tops with 2 tbsp melted butter. If desired, sprinkle cinnamon sugar on top for extra crunch and flavor.
  5. Bake the Bombs: Bake in the preheated oven for 15-18 minutes, or until the biscuits are golden brown and cooked through.
  6. Cool and Serve: Remove from the oven and allow to cool slightly before serving. Enjoy warm to experience the gooey caramel and tender apple filling inside.

Notes

  • You can substitute caramel candy with caramel bits or caramel sauce but caramel candies melt best for this recipe.
  • For a crispier crust, brush with an egg wash instead of butter.
  • These bombs are best served warm but can be reheated in the oven or microwave.
  • Make sure to seal the dough well to prevent caramel leakage during baking.
