Ingredients

Scale

Ground Beef Mixture

  • 2 pounds extra-lean ground beef
  • 2 jalapeño peppers, seeded and diced
  • 1 onion, diced
  • 4 cloves garlic, grated
  • 2 teaspoons kosher salt, or to taste
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper, or to taste

Liquid and Flavorings

  • 2 cups low-sodium chicken broth
  • 1 cup strained tomatoes (or diced tomatoes or ground tomatoes)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons cornstarch, optional (or flour)

Topping

  • 1 cup shredded Cheddar cheese, divided

Instructions

  1. Sauté the beef and aromatics: Place ground beef, diced jalapeños, diced onion, grated garlic, salt, black pepper, and cayenne pepper in a large braiser pan over medium-high heat. Cook, breaking up the meat with a wooden spoon, stirring regularly until most moisture evaporates and the mixture browns and becomes crumbly, about 15 minutes.
  2. Add liquids and thicken: Stir in the low-sodium chicken broth, cornstarch (if using), strained tomatoes, Dijon mustard, and Worcestershire sauce. Mix well and bring the mixture to a simmer. Lower heat to medium and cook, stirring occasionally, until thickened, approximately 25 minutes.
  3. Add and fold in cheese: Sprinkle half of the shredded Cheddar cheese over the top of the dip. Use a fork to poke the cheese down and gently stir it into the mixture. Then top with the remaining cheese evenly.
  4. Broil the dip: Place the pan under the broiler and broil until the Cheddar cheese is browned, bubbly, and golden, about 5 minutes. Watch carefully to prevent burning.
  5. Garnish and serve: Once broiled, remove from heat and sprinkle with red chili pepper flakes and chopped parsley if desired. Serve the dip hot, warm, or at room temperature. Enjoy your delicious cheesy ground beef dip!

Notes

  • For a milder dip, reduce or omit the jalapeños and cayenne pepper.
  • Cornstarch is optional but helps thicken the dip without altering flavor.
  • This dip pairs wonderfully with tortilla chips, crackers, or toasted baguette slices.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or in the oven.
  • Use extra-lean ground beef to reduce fat and avoid excess grease during cooking.
