Instructions

  1. Prepare the avocado spread: In a small bowl, mash the ripe avocado thoroughly with lemon juice, salt, and pepper until creamy and well combined.
  2. Assemble the sandwich: Spread mayonnaise or aioli on one side of each slice of bread if using. On the unspread side of one slice, evenly spread the avocado mixture. Layer the shredded chicken evenly over the avocado, then place the cheese slices on top. Add any optional ingredients like sliced tomato, red onion, or crispy bacon if desired. Top with the other bread slice, mayo side facing out.
  3. Toast the sandwich: Heat a skillet over medium heat and melt the butter thoroughly. Carefully flip and cook for another 3 to 4 minutes on the other side until the bread is golden brown and cheese is melted.
