Ingredients

Scale

Base

  • 1 1/2 cups (135g) Rolled Oats
  • 1/2 cup (60g) All-Purpose Flour
  • 1/4 cup (50g) Brown Sugar
  • 1/4 cup (57g) Melted Butter
  • 1/4 tsp (1.5g) Salt

Filling

  • 1/4 cup (50g) Brown Sugar
  • 1/4 cup (57g) Softened Butter
  • 1 tbsp (8g) Ground Cinnamon

Glaze

  • 1/2 cup (60g) Powdered Sugar
  • 12 tbsp (15-30ml) Milk
  • 1/4 tsp (1.25ml) Vanilla Extract

Instructions

  1. Prepare the oven and pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it to prevent sticking.
  2. Make the base mixture: In a large mixing bowl, combine the rolled oats, all-purpose flour, 1/4 cup brown sugar, melted butter, and salt. Stir until all ingredients are thoroughly mixed into a crumbly dough.
  3. Press base into pan: Transfer about two-thirds of the oat mixture into the prepared baking pan. Using the back of a spoon or your hands, press it firmly and evenly across the bottom to form the base layer.
  4. Prepare the cinnamon filling: In a separate bowl, mix the softened butter, 1/4 cup brown sugar, and ground cinnamon until smooth and well combined to create the cinnamon filling.
  5. Spread the filling: Evenly spread the cinnamon-sugar filling over the pressed oat base layer in the pan.
  6. Add the topping: Crumble the remaining oat mixture over the cinnamon filling, sprinkling it evenly to cover the filling layer.
  7. Bake the bars: Place the pan in the preheated oven and bake for approximately 25-30 minutes, or until the top is golden brown and the bars are set.
  8. Prepare the glaze: While the bars bake, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust the milk quantity to reach desired glaze consistency.
  9. Cool and glaze: Allow the bars to cool completely in the pan on a wire rack. Once cooled, drizzle the prepared glaze evenly over the bars.
  10. Serve: Cut into squares and serve. Store any leftovers in an airtight container at room temperature for up to 3 days.

Notes

  • For a richer flavor, you can use brown butter instead of regular melted butter in the base.
  • Adjust the amount of cinnamon in the filling to your preference if you want it spicier or milder.
  • Add chopped nuts such as pecans or walnuts to the topping for an extra crunch.
  • If you prefer a dairy-free version, substitute butter with coconut oil and use a non-dairy milk for the glaze.
  • Make sure bars are fully cooled before glazing to prevent the glaze from melting and sliding off.
