Ingredients

Scale

Dry Ingredients

  • 12 oz dried linguine or spaghetti
  • 1 tsp sea salt, or to taste
  • ½ tsp freshly ground black pepper
  • ¼ tsp chili flakes (optional)

Fresh Produce

  • 1 lb ripe cherry tomatoes, halved
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 large handful fresh basil leaves, torn, plus extra for garnish

Liquids & Oils

  • 4 cups vegetable broth
  • 2 tbsp extra-virgin olive oil

Dairy

  • ½ cup freshly grated Parmesan or vegetarian hard cheese

Instructions

  1. Combine Ingredients: In a large deep skillet or Dutch oven, add the dried linguine or spaghetti, halved cherry tomatoes, thinly sliced onion, minced garlic, extra-virgin olive oil, and vegetable broth.
  2. Season: Sprinkle in the sea salt, freshly ground black pepper, and if desired, chili flakes. Stir to distribute the seasonings evenly across the mixture.
  3. Bring to Boil: Place the skillet over high heat and bring the mixture to a vigorous boil, stirring frequently to prevent the pasta from sticking to the bottom or clumping together.
  4. Simmer: Once boiling, reduce the heat to medium and allow the pasta to simmer uncovered. Continue stirring frequently until the pasta is cooked to al dente texture and the liquid has mostly absorbed — this should take approximately 10 to 12 minutes.
  5. Finish and Combine: Remove the pan from heat. Stir in the torn fresh basil leaves and half of the grated Parmesan cheese (if using), mixing thoroughly to combine all flavors and melt the cheese slightly.
  6. Adjust and Serve: Taste the pasta and adjust seasoning as needed with additional salt or pepper. Serve the pasta hot with extra basil leaves and remaining Parmesan cheese garnished on top for a warm and satisfying meal.

Notes

  • Using a deep skillet or Dutch oven is essential to have enough liquid and room for the pasta to cook properly.
  • Stirring frequently during cooking prevents the pasta from clumping or sticking to the pan.
  • The chili flakes are optional but add a nice gentle heat if you prefer a spicy kick.
  • You may substitute vegetable broth with chicken broth if not strictly vegetarian.
  • For a vegan version, omit the Parmesan cheese or substitute with vegan cheese alternatives.
  • This recipe is excellent for a quick weeknight dinner since it all cooks in one pan, which also makes for easy cleanup.
