Banana Bread Batter

  • 1 large egg
  • 4 ounces brick-style cream cheese (softened, lite is okay)
  • 1/4 cup granulated sugar
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Spray a 9×5-inch loaf pan with floured cooking spray or grease and flour it to prevent sticking; set aside.
  2. Mix banana bread batter: In a large bowl, whisk together the egg, light brown sugar, granulated sugar, liquid-state coconut oil, sour cream, and vanilla extract until well combined.
  3. Add bananas: Stir in the mashed ripe bananas to incorporate them evenly into the wet mixture.
  4. Add dry ingredients: Fold in the all-purpose flour, baking powder, baking soda, and optional salt gently with a spatula or spoon just until combined to avoid overmixing.

  7. Add cream cheese layer: Evenly pour the cream cheese filling over the banana bread batter in the loaf pan, smoothing the top gently with a spatula and making sure it reaches the edges.
  8. Top with remaining batter: Spoon the remaining banana bread batter over the cream cheese layer, smoothing very lightly so as not to disturb the cream cheese filling, and push batter into corners and sides as necessary.
