Instructions

  1. Prepare the strawberries: Wash the strawberries thoroughly and pat them dry with paper towels. Using a small paring knife or a melon baller, carefully hollow out the center of each strawberry, removing most of the core but leaving enough flesh to keep the strawberry intact and stable.
  2. Make the filling: In a medium mixing bowl, combine the softened cream cheese, sour cream, white sugar, vanilla extract, and fresh lemon juice if using. Beat the mixture together with an electric mixer until smooth and creamy.
  3. Whip the cream: In a separate bowl, whip the heavy whipping cream using an electric mixer until stiff peaks form. Be careful not to overbeat.
  4. Combine the filling and whipped cream: Gently fold the whipped cream into the cream cheese mixture with a spatula, being careful to retain as much air as possible for a light and fluffy texture.
  5. Fill the strawberries: Using a piping bag fitted with a star tip or a small spoon, carefully fill the hollowed strawberries with the creamy filling, mounding it slightly above the edge of the strawberry for a pretty presentation.
  6. Add the topping: Sprinkle the graham cracker crumbs generously over the filled strawberries, pressing slightly to help them stick to the filling.
  7. Chill before serving: Place the deviled strawberries in the refrigerator for at least 30 minutes to allow them to firm up and for the flavors to meld. Serve chilled for the best taste and texture.
