  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water for later if needed.
  2. Prepare the chicken: While the pasta cooks, season the chicken cubes lightly with salt and pepper. In a large skillet, melt 1 tablespoon of butter over medium-high heat and add the chicken pieces. Cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

Then, lower the heat and stir in the heavy cream. Allow the mixture to gently simmer and thicken for about 3-4 minutes, stirring occasionally.
  5. Add the cheese: Gradually whisk in the freshly grated Parmesan cheese until melted and the sauce is smooth. If the sauce is too thick, add a splash of reserved pasta water or extra chicken broth to loosen it.
  6. Combine everything: Return the cooked chicken to the skillet, mixing it into the sauce. Add the drained pasta and toss everything together gently, ensuring the pasta is fully coated with the creamy garlic Parmesan sauce.
  7. Serve: Taste and adjust seasoning with salt and pepper if needed. Serve immediately, optionally garnished with chopped fresh parsley or extra Parmesan cheese for added flavor and presentation.
