Ingredients

Scale

Salmon Bites

  • 1 pound salmon fillet, cut into bite-sized cubes
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 large egg
  • 1 cup panko breadcrumbs

Bang Bang Sauce

  • 1/3 cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon honey

Instructions

  1. Prepare the salmon: Cut the skinless salmon fillet into bite-sized cubes and pat them dry using paper towels to ensure the coating sticks well.
  2. Mix coatings: In a small bowl, whisk the egg. In a separate bowl, combine the cornstarch, garlic powder, paprika, salt, and black pepper to create the seasoned dry mixture.
  3. Coat the salmon: Dip each salmon piece first into the beaten egg, then dredge it in the seasoned cornstarch mixture, and finally coat it thoroughly with panko breadcrumbs for a crispy texture.
  4. Cook the salmon bites: Choose your preferred cooking method:
    • Air Frying: Preheat the air fryer to 400°F (200°C) and air fry the coated salmon bites for 8–10 minutes until golden and crispy.
    • Baking: Preheat the oven to 425°F (220°C) and bake the salmon bites on a greased or parchment-lined baking sheet for 12–15 minutes until cooked through and crispy.
    • Shallow-frying: Heat oil in a skillet over medium heat and shallow-fry the salmon bites until golden brown and cooked through, about 3-4 minutes per side.
  5. Prepare the bang bang sauce: In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and honey until smooth and well combined.
  6. Serve: Drizzle the bang bang sauce over the salmon bites or serve it on the side for dipping. Enjoy immediately while warm and crispy.

Notes

  • Ensure salmon pieces are dry before coating to help the breading stick better.
  • Adjust spiciness of sauce by varying sriracha to taste.
  • For extra crispiness, you can double dip the salmon pieces in egg and breadcrumbs.
  • Can be served as an appetizer, party snack, or light meal.
  • Leftovers can be refrigerated for up to 2 days and reheated in an air fryer or oven to maintain crispiness.
