Chicken

Flour Mixture

  • ⅓ cup all-purpose flour
  • ½ teaspoon salt
  • ¾ teaspoon smoked paprika

Egg Mixture

  • 2 eggs
  • ¼ teaspoon salt

Breadcrumbs Mixture

  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 teaspoon dried parsley
  • ½ teaspoon ground black pepper
  • ½ teaspoon sea salt
  • ½ teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ¼ cup Parmesan cheese, freshly grated

Assembly

  • 2 romaine hearts, chopped
  • 12 French baguettes
  • Parmesan cheese, freshly grated, for garnish

Instructions

  1. Prepare the Caesar Dressing: In a bowl, combine mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, Parmesan cheese, minced garlic, black pepper, and salt. Stir thoroughly until the dressing is smooth and creamy. Reserve 4-5 tablespoons of this dressing for the sandwich assembly, and mix the rest with the chopped romaine lettuce. Cover both separately and refrigerate.
  2. Prepare the Chicken Cutlets: Place the chicken cutlets on a cutting board. If the pieces vary in thickness, gently pound them to an even thickness using a meat mallet or rolling pin. Season both sides generously with sea salt and ground black pepper.
  3. Set Up Breading Station: Arrange three shallow plates for breading: first with the flour mixed with salt and smoked paprika, second with whisked eggs seasoned with salt, and third with combined panko crumbs, breadcrumbs, dried parsley, black pepper, sea salt, dried oregano, garlic powder, and grated Parmesan cheese.
  4. Bread the Chicken: Heat oil in a frying pan over medium heat. Take each cutlet and dredge thoroughly in the flour mixture, shaking off excess. Dip into the egg mixture, then press firmly into the breadcrumb mixture, ensuring an even coating. Repeat for all cutlets.
  5. Fry the Chicken: Test the oil by dropping in a few breadcrumbs; if they sizzle immediately, it’s ready. Carefully place the breaded chicken cutlets into the oil. Fry until golden brown on one side, about 4-5 minutes, then flip to cook the other side until the chicken is crispy and fully cooked through. Remove and drain on a wire rack. Fry in batches to avoid overcrowding and ensure even cooking.
  6. Assemble the Sandwiches: Slice the French baguettes into approximately 12 cm (5 inch) portions and cut them lengthwise. Spread a generous layer of the reserved Caesar dressing on the bread. Place a crispy chicken cutlet on each portion, top with the Caesar salad (romaine dressed earlier), and sprinkle with additional freshly grated Parmesan cheese. Close the sandwiches and serve immediately, ideally with a side of fries.
