Instructions

  1. Prepare the Gnocchi: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the gnocchi in a single layer and cook without stirring for about 3 to 5 minutes until the underside is golden and crispy.
  2. Flip and Crisp: Turn the gnocchi pieces over and cook the other side until equally crispy and golden, about another 3 minutes. Remove from the skillet and set aside.
  3. Sauté Spinach and Garlic: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Add the fresh spinach and sauté until wilted, about 2 to 3 minutes. If using, sprinkle in the red pepper flakes while cooking.
  4. Combine and Season: Return the crispy gnocchi to the skillet with the spinach. Toss everything together to combine and heat through for another minute. Season with salt and black pepper to taste.
  5. Add Feta Cheese: Remove from heat and sprinkle the crumbled feta cheese evenly over the top. Serve immediately to enjoy the contrast of creamy feta with crispy gnocchi and tender spinach.
