Ingredients

Scale

Meat and Marinade

  • 1 tablespoon olive oil
  • 3 lbs flank steak
  • 1 cup beef broth
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons minced garlic
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 2 fresh limes, juiced

Vegetables and Garnishes

  • 1/2 white onion, chopped
  • 1 bundle cilantro, chopped

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine olive oil, beef broth, salt, pepper, minced garlic, chili powder, paprika, cumin, and lime juice. Stir well to make a flavorful marinade.
  2. Marinate the Steak: Place the 3 lbs flank steak in a large resealable bag or shallow dish and pour the marinade over the meat. Ensure it is thoroughly coated. Refrigerate and marinate for at least 2 hours, preferably overnight for deeper flavor.
  3. Cook the Steak in Slow Cooker: Transfer the marinated flank steak and the marinade into the crock pot. Add the chopped white onion on top. Cover and cook on low heat for 6-8 hours or on high for 3-4 hours until the meat is tender and easy to shred.
  4. Shred the Carne Asada: Once cooked, remove the steak from the crock pot and shred it using two forks. Return shredded meat to the crock pot to soak up juices and keep warm.
  5. Assemble the Tacos: Warm corn or flour tortillas. Fill each tortilla with the shredded carne asada and garnish with chopped cilantro and additional onions if desired. Serve immediately with lime wedges.

Notes

  • For best flavor, marinate the steak overnight.
  • Use skirt or flank steak for the best texture.
  • Adjust spices to your heat preference; add a pinch of cayenne if you like it spicier.
  • Serve with fresh lime wedges to enhance flavor.
  • Use corn tortillas for gluten-free options.
