Ingredients

Scale

Meats

  • 1 lb lean ground beef
  • 1 lb Italian sausage (mild or spicy)

Vegetables & Aromatics

  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced

Liquids & Tomatoes

  • 28 oz crushed tomatoes (canned)
  • 4 cups low-sodium chicken broth

Pasta & Cheese

  • 8 oz lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese

Seasonings

  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare the meat and aromatics: In a skillet over medium heat, cook the ground beef, Italian sausage, chopped onion, and minced garlic until the meat is browned and the onions are translucent. Drain excess fat if necessary.
  2. Combine ingredients in crock pot: Add the cooked meat mixture to the crock pot along with the crushed tomatoes, low-sodium chicken broth, Italian seasoning, salt, and pepper. Stir well to combine all ingredients.
  3. Cook the soup: Cover the crock pot and cook on low for 6 hours or on high for 3 hours to allow flavors to meld and the soup to develop rich taste.
  4. Add pasta: About 30 minutes before serving, stir in the broken lasagna noodles. Continue cooking on high until the noodles are tender but not mushy.
  5. Finish with cheese: Once the noodles are cooked, ladle the soup into bowls and add a spoonful of ricotta cheese and a sprinkle of shredded mozzarella on top. Stir slightly to melt the cheese or serve it on the side for a richer lasagna experience.
  6. Serve warm: Enjoy the hearty Crock Pot Lasagna Soup with some crusty bread or a side salad for a complete meal.

Notes

  • You can use spicy or mild Italian sausage based on your preference.
  • For a thicker soup, reduce the amount of chicken broth.
  • If you prefer a vegetarian version, substitute meat with chopped mushrooms or plant-based sausage.
  • Use gluten-free lasagna noodles if needed to make the recipe gluten-free.
  • Ricotta cheese can be swapped with cottage cheese as a lighter alternative.
