Ingredients

Scale

Wet Ingredients

  • 1 ¼ cups Fairlife chocolate milk
  • ⅓ cup natural peanut butter
  • 5.3 oz container vanilla Greek yogurt (e.g. Oikos Pro 20 Gram Protein)
  • 1 large egg

Dry Ingredients

  • 2 cups Kodiak Dark Chocolate Power Cakes pancake mix
  • ½ cup dark chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. Mix Wet Ingredients: In a large bowl, whisk together the Fairlife chocolate milk, natural peanut butter, vanilla Greek yogurt, and the egg until smooth and well combined.
  3. Add Dry Ingredients: Gradually add the Kodiak Dark Chocolate Power Cakes mix to the wet ingredients, stirring gently until just combined; be careful not to overmix.
  4. Fold in Chocolate Chips: Gently fold the dark chocolate chips into the batter to evenly distribute.
  5. Fill Muffin Tin: Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full to allow room for rising.
  6. Bake: Bake in the preheated oven for 18 to 22 minutes, or until a toothpick inserted in the center of a muffin comes out clean or with just a few moist crumbs.
  7. Cool and Serve: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.

Notes

  • Use natural peanut butter without added sugar or oils for the healthiest option.
  • Make sure not to overmix the batter to keep the muffins light and fluffy.
  • These muffins can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
  • For a gluten-free version, substitute the pancake mix with a certified gluten-free mix.
  • Adding a sprinkle of sea salt on top before baking enhances the chocolate flavor.
