  • 2 cups fresh strawberries (sliced)

Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: In a large mixing bowl, beat the softened unsalted butter and granulated sugar together until the mixture is light and fluffy, about 3-4 minutes.
  4. Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition, then mix in the pure vanilla extract until combined.
  5. Combine Wet and Dry Ingredients: Alternately add the dry ingredients and whole milk to the butter mixture, beginning and ending with the flour mixture. Mix each addition just until incorporated to avoid overmixing.
  6. Pour Batter and Bake: Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Prepare Strawberry Filling: While the cake bakes, combine the sliced strawberries and ¼ cup sugar in a bowl. Toss to coat and let sit for at least 15 minutes to macerate, releasing juices for the filling.
  8. Cool Cakes: Remove cakes from the oven and let them cool in pans for 10 minutes before transferring to wire racks to cool completely.
  9. Assemble the Cake: Once the cakes are cooled, place one cake layer on a serving plate. Spoon the strawberry filling evenly over the top. Place the second layer on top. Optionally, refrigerate the cake for about 30 minutes to allow the filling to set.
