Ingredients

Scale

Chicken Mixture

  • 23 cups shredded cooked chicken (rotisserie or baked)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream or mayonnaise
  • 1/4 cup chicken broth
  • Salt and pepper to taste

Stuffing Topping

  • 1 box (6 oz) stuffing mix (traditional or cornbread)
  • 2 tablespoons melted butter

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the right temperature while you prepare the casserole.
  2. Mix Chicken Filling: In a large bowl, combine the shredded cooked chicken, cream of chicken soup, sour cream (or mayonnaise), chicken broth, and a pinch of salt and pepper. Stir well until all ingredients are evenly mixed.
  3. Prepare Stuffing Topping: In a separate bowl, pour the stuffing mix and drizzle melted butter over it. Mix thoroughly to ensure the butter coats the stuffing evenly, which will help it bake crispy.
  4. Assemble Casserole: Transfer the chicken mixture into a greased 9×13-inch baking dish, spreading it out evenly. Sprinkle the buttered stuffing mix evenly over the top of the chicken mixture.
  5. Bake: Place the casserole in the preheated oven and bake uncovered for 30-35 minutes, or until the stuffing topping is golden brown and the casserole is heated through.
  6. Serve: Remove from the oven and let the casserole rest for 5 minutes before serving. This allows the casserole to set slightly and enhances the flavors.

Notes

  • Use rotisserie chicken to save time, but any cooked, shredded chicken works.
  • For a creamier texture, use sour cream instead of mayonnaise or vice versa based on preference.
  • You can add frozen mixed vegetables for added nutrition and color.
  • Adjust salt and pepper according to your taste, especially if your soup or stuffing mix is already salted.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven or microwave.
