Ingredients

Scale

Chicken Mixture

  • 23 cups shredded cooked chicken (rotisserie or baked)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream or mayonnaise
  • 1/4 cup chicken broth
  • Salt and pepper to taste

Stuffing Topping

  • 1 box (6 oz) stuffing mix (traditional or cornbread)
  • 2 tablespoons melted butter

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the casserole.
  2. Prepare Chicken Mixture: In a large bowl, combine the shredded cooked chicken, cream of chicken soup, sour cream or mayonnaise, chicken broth, and salt and pepper. Mix until well blended.
  3. Prepare Stuffing: In a separate bowl, mix the stuffing mix with the melted butter until the crumbs are evenly coated.
  4. Assemble Casserole: Spread the chicken mixture evenly in a greased 9×13 inch baking dish. Sprinkle the prepared stuffing mixture evenly over the top.
  5. Bake: Place the casserole in the preheated oven and bake for 30 to 35 minutes, or until the stuffing topping is golden brown and the casserole is heated through.
  6. Serve: Remove from oven and let it cool slightly before serving to allow the casserole to set.

Notes

  • You can substitute sour cream with mayonnaise based on your preference.
  • Using rotisserie chicken saves time and adds great flavor.
  • For a richer casserole, add 1/2 cup shredded cheese mixed into the chicken mixture.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
