Ingredients

Scale

Chicken Mixture

  • 23 cups shredded cooked chicken (rotisserie or baked)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream or mayonnaise
  • 1/4 cup chicken broth
  • Salt and pepper to taste

Stuffing Topping

  • 1 box (6 oz) stuffing mix (traditional or cornbread)
  • 2 tablespoons melted butter

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the correct temperature by the time your casserole is assembled.
  2. Prepare Chicken Mixture: In a large mixing bowl, combine the shredded cooked chicken, cream of chicken soup, sour cream (or mayonnaise), chicken broth, salt, and pepper. Stir well until all ingredients are evenly mixed and creamy.
  3. Prepare Stuffing: In a separate bowl, pour the stuffing mix. Melt the butter in the microwave or on the stovetop and then toss the stuffing mix with the melted butter until evenly coated.
  4. Assemble Casserole: Transfer the chicken mixture into a greased 9×13 inch baking dish and spread evenly. Sprinkle the buttery stuffing mix evenly over the top of the chicken mixture to form a crumbly topping.
  5. Bake: Place the casserole in the preheated oven and bake for 30 to 35 minutes, or until the stuffing topping is golden brown and the casserole is bubbling around the edges.
  6. Cool and Serve: Remove the casserole from the oven and let it cool for 5 minutes before serving. This allows the casserole to set slightly for easier serving.

Notes

  • You can use either sour cream or mayonnaise depending on your preference for creaminess and tanginess.
  • Rotisserie chicken works great for convenience, but any cooked chicken can be used.
  • For a crispier topping, you can broil the casserole for 2-3 minutes at the end of baking—watch closely to prevent burning.
  • Feel free to add chopped vegetables like celery or onions to the chicken mixture for extra flavor and texture.
  • This casserole freezes well; bake it and then freeze leftovers or assemble raw and freeze before baking for a quick future meal.
