4.7 from 146 reviews

Drömmar, also known as Dream Cookies, are light and airy Swedish butter cookies characterized by their delicate crumb and subtle vanilla flavor. These melt-in-your-mouth treats are made with butter, sugar, vanilla, and a hint of baker’s ammonia for a unique texture. Perfect with a cup of coffee or tea, they are simple to prepare and bake at a low temperature for a tender bite.

Ingredients

Scale

Cookies

  • 50 g Butter (1.75 oz), room temperature
  • 90 g Sugar (2/3 cup or 1½ dl)
  • 2 tsp Vanilla sugar (or vanilla extract)
  • 3 tbsp Vegetable oil
  • 1/2 tsp Baker’s Ammonia
  • 120 g All-purpose flour (3/4 cup or 2 dl)

Instructions

  1. Preheat Oven: Preheat your oven to 150°C (300°F) ensuring it reaches the right temperature for gentle baking of the cookies.
  2. Mix Butter and Sugars: In a mixing bowl, combine the room temperature butter, sugar, and vanilla sugar or vanilla extract. Mix thoroughly until the mixture is smooth and creamy, which will create the base of the dough.
  3. Add Vegetable Oil: Gradually add the vegetable oil to the mixture while continuing to mix to ensure it is fully incorporated and smooth.
  4. Prepare Baker’s Ammonia with Flour: Mix the baker’s ammonia with a small portion of the flour to help it distribute evenly in the dough and avoid clumping.
  5. Incorporate Baker’s Ammonia Mixture: Add the ammonia and flour combination to the dough and mix well to combine.
  6. Add Remaining Flour: Slowly work in the remaining flour to the dough, mixing until fully combined and the dough is manageable.
  7. Shape Dough Balls: Roll small balls of dough evenly sized and place them spaced apart on a baking sheet lined with parchment paper.
  8. Bake: Place the baking sheet in the middle of the preheated oven and bake the cookies for 15-17 minutes until they are lightly golden and set.
  9. Cool Cookies: Remove the cookies from the oven and allow them to cool on the baking sheet. This helps them set properly and prevents breaking.

Notes

  • Baker’s ammonia is an old-fashioned leavening agent that creates a unique crispness; if unavailable, baking powder can be substituted but texture will differ.
  • Ensure butter is at room temperature for a smooth dough consistency.
  • Do not overbake; cookies should be lightly golden, as they continue to crisp as they cool.
  • Use parchment paper or a silicone mat to prevent sticking and for easy cleanup.
  • Store cookies in an airtight container to maintain freshness and crispness.
