Ingredients

Scale

Chicken and Rice

  • 2 cups cooked rotisserie chicken, shredded
  • 1 cup uncooked white rice (long-grain or jasmine)
  • 3 cups chicken broth

Sauce and Vegetables

  • 1 cup Alfredo sauce (store-bought or homemade)
  • 1 cup frozen peas and carrots (optional)

Cheese and Seasoning

  • 1 cup shredded mozzarella cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Mix Ingredients: In a large bowl, combine shredded rotisserie chicken, uncooked white rice, chicken broth, Alfredo sauce, frozen peas and carrots, garlic powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly distributed.
  3. Transfer to Baking Dish: Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly. Sprinkle the shredded mozzarella cheese evenly over the top.
  4. Bake: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil during the last 10 minutes to allow the cheese to melt and brown slightly.
  5. Rest and Garnish: Once baked, let the casserole rest for 5 minutes before serving. Garnish with freshly chopped parsley if desired, then serve warm.

Notes

  • You can substitute the rotisserie chicken with cooked frozen or fresh chicken breasts if preferred.
  • If you prefer a creamier casserole, stir in an additional ¼ cup of Alfredo sauce after baking.
  • Adding frozen peas and carrots is optional but adds color and nutrition.
  • For a gluten-free option, ensure the Alfredo sauce and chicken broth are certified gluten-free.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the microwave.
