Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Combine Ingredients: In a large mixing bowl, combine the uncooked rice, shredded rotisserie chicken, chicken broth, Alfredo sauce, frozen peas and carrots (if using), garlic powder, Italian seasoning, salt, and pepper. Stir everything together until well mixed.
  3. Transfer to Baking Dish: Pour the mixture into a greased 9×13-inch baking dish, spreading it out evenly to ensure even cooking.
  4. Add Cheese: Sprinkle the shredded mozzarella cheese evenly over the top of the casserole.
  5. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 35-40 minutes or until the rice is tender and the casserole is bubbly.
