Instructions

  1. Prepare vegetables: Cut each onion into eight wedges. Roughly chop the carrots and cut the potatoes into large chunks. Put the kettle on to boil water.
  2. Brown the beef: Heat a large non-stick pan over medium heat. Add the lean minced beef and fry quickly, stirring continuously, until evenly browned and crumbly.
  3. Add stock and vegetables: Crumble in the beef stock cubes and mix well into the browned meat. Add the prepared onions, carrots, and potatoes to the pan, stirring them around to combine.
  4. Add boiling water and simmer: Pour in 900ml (1.5 pints) of hot water from the kettle. Bring the mixture to a boil, then reduce the heat to low, cover the pan, and let it simmer gently for 25-30 minutes, or until the vegetables are tender.
  5. Add baked beans and seasoning: Stir in the canned baked beans and add a generous splash of Worcestershire sauce. Heat through thoroughly while tasting and adjusting seasoning with salt and pepper if needed.
  6. Serve: Scatter the chopped parsley over the hotpot before ladling it into bowls. Place the Worcestershire sauce bottle on the table so diners can add extra if they prefer more spice.
