  • 1/4 cup unsweetened cocoa powder (Dutch Processed recommended)
  • 1/2 cup crushed peanuts (small pieces for better sticking)
  • 1/3 cup sprinkles or similar decorative toppings
  • 1/4 cup icing sugar / powdered sugar

Instructions

  1. Make the Ganache: Place the dark chocolate, cream, and butter in a microwave-safe bowl. Microwave on high for 4 bursts of 30 seconds each, stirring well between each burst until the mixture is combined.
  2. Rest the Ganache: Cover the bowl with a plate and let it stand for 5 minutes. Then stir thoroughly until the chocolate is completely melted and the mixture is smooth and glossy, forming a ganache.
  3. Chill the Ganache: Place the ganache in the refrigerator for 6 hours to firm up properly. Avoid freezing as it alters the texture.
  4. Prepare Rolling Station: Chill a dinner plate or tray in the refrigerator on which you will place the rolled truffles.
  5. Prepare Coatings: Pour your choice of cocoa powder, desiccated coconut, crushed peanuts, sprinkles, or icing sugar into small bowls or plates.
  6. Check Ganache Texture: After chilling, the ganache should be firm but pliable—softer than cold butter but firmer than peanut butter.
  7. Cool Your Hands: Place an ice pack or a bag of frozen peas covered with paper towels on the bench to cool your hands during rolling.
  8. Roll the Truffles: Using a tablespoon measure, scoop portions of ganache, then use a teaspoon to transfer the chocolate to your hands. Quickly roll into smooth balls, placing each on the chilled plate. Chill your hands as needed on the ice pack to prevent melting.
