Ingredients

Scale

Chicken and Seasonings

  • 1 lb boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Liquids and Cheese

  • 3 cups chicken broth
  • 8 oz cream cheese, cubed
  • 1 cup grated parmesan cheese

Pasta and Greens

  • 12 oz penne or rotini pasta
  • 2 cups baby spinach

Garnish

  • Fresh parsley for garnish

Instructions

  1. Prepare the Chicken: Season the chicken breasts with garlic powder, onion powder, Italian seasoning, salt, and pepper. Heat olive oil in a pan over medium heat and sear the chicken for 2-3 minutes per side until lightly browned to enhance flavor.
  2. Slow Cook the Chicken: Place the browned chicken breasts into the crockpot. Pour in the chicken broth and cover. Cook on low for 4-5 hours or on high for 2-3 hours until the chicken is fully cooked and tender.
  3. Shred the Chicken: Remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken to the crockpot.
  4. Add Cheese and Pasta: Stir in the cubed cream cheese and grated parmesan cheese until melted and creamy. Add the uncooked pasta to the crockpot, stirring well to combine.
  5. Cook Pasta and Spinach: Cover and cook on high for 30-40 minutes more, stirring occasionally, until the pasta is tender. About 5 minutes before the pasta is done, stir in the baby spinach and cook until wilted.
  6. Serve: Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley before serving warm.

Notes

  • Use fresh parsley for the best flavor as garnish.
  • If you prefer a thicker sauce, stir in a tablespoon of cornstarch mixed with cold water before adding pasta.
  • For a lower fat option, substitute light cream cheese and reduced-fat parmesan.
  • This recipe can be made ahead and refrigerated for up to 3 days; reheat gently.
  • Feel free to add mushrooms or sun-dried tomatoes for extra flavor.
