Ingredients

Scale

Chicken and Batter

  • 450g chicken, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 2 tbsp flour
  • 1 tbsp soy sauce
  • 1 egg white
  • 1/4 tsp white pepper
  • 1/3 cup water

Sesame Sauce and Garnish

  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1.5 tbsp ketchup
  • 1.5 tbsp sesame oil
  • 2 tsp sesame seeds
  • 1 green onion, chopped

Additional

  • Frying oil (for deep frying, quantity as needed)

Instructions

  1. Prepare Chicken & Batter: Cut chicken into uniform bite-sized pieces. In a medium bowl, whisk together 1/2 cup cornstarch, 2 tbsp flour, 1 tbsp soy sauce, 1 egg white, 1/4 tsp white pepper, and 1/3 cup water until smooth. Toss the chicken pieces in this batter until each piece is fully coated.
  2. Prepare Sesame Sauce: In a separate small bowl, combine 3 tbsp honey, 2 tbsp soy sauce, 1.5 tbsp ketchup, and 1.5 tbsp sesame oil. Whisk until well combined. Set aside.
  3. Fry the Chicken: Heat frying oil in a large heavy-bottomed pot or deep fryer to 350-375°F (175-190°C). Carefully lower the battered chicken pieces into the hot oil in small batches to avoid overcrowding. Fry for 4-6 minutes until the chicken is golden brown, crispy, and cooked through. Remove with a slotted spoon and transfer to a wire rack set over paper towels to drain excess oil.
  4. Combine & Serve: Transfer the freshly fried chicken to a large mixing bowl. Pour the prepared sesame sauce over the chicken. Toss gently and quickly to ensure every piece is evenly coated. Garnish with 2 tsp sesame seeds and 1 chopped green onion. Serve hot immediately with rice or your preferred side.

Notes

  • Ensure oil temperature stays between 350-375°F to achieve crispy chicken without being greasy.
  • Do not overcrowd the frying pot to maintain the oil temperature and avoid soggy chicken.
  • For a healthier option, you may try baking the chicken, but frying ensures the best texture.
  • Use fresh green onions and sesame seeds for garnish to add freshness and crunch.
  • Serve immediately to enjoy maximum crispiness.
