Ingredients

Scale

Main Ingredients

  • 4 large flour tortillas, about 12 inches in diameter
  • 8 slices provolone cheese, thinly sliced
  • 12 ounces deli roast beef, freshly sliced
  • 1 cup French fried onions, store-bought or homemade
  • 2 tablespoons extra virgin olive oil

For Au Jus

  • 1 can (10.5 ounces) beef consommé
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper for easy release and cleanup.
  2. Assemble Roll Ups: Lay a tortilla flat. Place 2 slices of provolone cheese over half of the tortilla, followed by approximately 3 ounces of roast beef and a generous handful of French fried onions. Brush the inside tortilla edge lightly with olive oil.
  3. Roll and Arrange: Starting from the filled end, roll up the tortilla tightly, ensuring the fillings are enclosed. Press the oiled edge to seal the roll. Place the roll seam-side down on the prepared baking sheet. Repeat this process with all tortillas.
  4. Brush with Olive Oil: Lightly brush the tops and sides of each roll with the remaining olive oil to promote a crisp, golden finish during baking.
  5. Bake: Bake the roll ups in the preheated oven for 8–10 minutes, rotating the baking sheet halfway through if needed, until the tortillas are golden brown and the cheese starts bubbling at the edges.
  6. Prepare Au Jus: While roll ups bake, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan. Heat over medium heat, whisking to blend, and bring to a gentle simmer. Simmer for 3–4 minutes until hot and fragrant.
  7. Rest and Slice: Remove roll ups from the oven and let them rest for 2 minutes on a wire rack to allow the cheese to set. Slice each roll into halves or thirds for serving.
  8. Serve: Serve the French Dip Tortilla Roll Ups warm with the prepared au jus sauce for dipping.

Notes

  • Use fresh sliced roast beef for the best flavor and texture.
  • Brushing with olive oil on the tortilla edges helps seal the rolls and ensures they crisp nicely in the oven.
  • You can swap provolone cheese with Swiss or mozzarella for variation.
  • For a spicier kick, add a pinch of crushed red pepper flakes to the au jus.
  • Store leftover au jus in the refrigerator and reheat gently before use.
