Instructions

  1. Cook the Beef: In a medium skillet over medium heat, brown 1 lb of ground beef until fully cooked, about 8 to 10 minutes. Drain any excess grease from the pan.   2. Warm the Tortillas: To make the tortillas pliable and easy to roll without cracking, warm them either in a dry skillet over low heat for about 15-20 seconds per side, or microwave them covered with a damp paper towel for 20-30 seconds until soft.
  3. Assemble the Burrito: Lay each warm tortilla flat. Spread a layer of cooked white rice evenly on the tortilla, then add a generous portion of the seasoned beef mixture. Drizzle with 1/2 cup nacho cheese sauce and 1/4 cup chipotle sauce. Add 1/2 cup sour cream over the top, then sprinkle with a mix of shredded cheddar and mozzarella cheeses to cover the filling.
