Instructions

  1. Prepare the beef filling: In a large skillet over medium heat, cook the ground beef until browned and cooked through, breaking it up as it cooks. Drain excess fat if necessary. Add the diced onion, minced garlic, cumin, and chili powder, and cook for another 3-4 minutes until the onion is soft and fragrant. Remove from heat.
  2. Preheat the oven: Set your oven to 375°F (190°C) to warm up while assembling the enchiladas.
  3. Assemble the enchiladas: Spread about ½ cup of enchilada sauce evenly over the bottom of a baking dish. Warm the tortillas slightly to make them pliable. Spoon an even amount of the beef mixture down the center of each tortilla. Roll up the tortillas tightly and place them seam-side down in the baking dish.
