Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to allow it to reach the ideal roasting temperature while you prepare the potatoes.
  2. Prepare the potatoes: In a large bowl, toss the quartered baby potatoes with finely chopped garlic, extra-virgin olive oil, fresh rosemary, parsley, and thyme leaves.
