Ingredients

Scale

Cheese and Toppings

  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup diced pepperoni
  • 1/2 cup diced bell peppers
  • 1/2 cup diced mushrooms

Other Ingredients

  • 1 cup pizza sauce
  • 1 package (13.8 oz) refrigerated pizza dough
  • 1 egg, beaten (for egg wash)
  • 1 tsp Italian seasoning

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough for baking the pizza pockets to a golden perfection.
  2. Prepare the Dough: Roll out the refrigerated pizza dough on a lightly floured surface into a large rectangle about 1/8-inch thick for easy folding and stuffing.
  3. Mix the Filling: In a medium bowl, combine shredded mozzarella, grated Parmesan, diced pepperoni, bell peppers, mushrooms, and Italian seasoning. Stir to mix evenly.
  4. Assemble the Pockets: Cut the rolled dough into rectangles approximately 4×6 inches. Spoon a generous amount of the pizza sauce onto one half of each rectangle, then add the cheese and topping mixture over the sauce, leaving a border for sealing.
  5. Seal the Pockets: Fold the dough over the filling to create a pocket. Press the edges firmly with a fork to seal completely to prevent leakage during baking.
  6. Apply Egg Wash: Brush the tops of each pizza pocket with the beaten egg. This will give them a shiny, golden crust.
  7. Bake: Place the pockets on a baking sheet lined with parchment paper and bake in the oven for 15-18 minutes or until the crust is golden brown and cooked through.
  8. Cool and Serve: Allow the pizza pockets to cool for 5 minutes on a wire rack before serving to avoid burning and help the filling set.

Notes

  • Feel free to customize the fillings with your favorite pizza toppings such as olives, onions, or different cheeses.
  • For a crispier crust, you can bake on a preheated pizza stone.
  • These pockets can be made ahead and frozen; bake directly from frozen adding a few extra minutes to the baking time.
  • Use a toothpick or skewer to poke vents in the dough before baking to prevent puffing.
