Ingredients

Scale

Oat Mixture

  • 1 cup rolled oats
  • 1 cup warm milk (240 ml)

Yeast Mixture

  • 2 teaspoons active dry yeast
  • 1/4 cup warm water (60 ml)
  • 1 tablespoon honey (for yeast activation)

Dough Ingredients

  • 1/4 cup honey (60 ml)
  • 1/4 cup melted butter (60 ml)
  • 3 cups all-purpose flour (375 g)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Soften Oats: In a small bowl, combine 1 cup rolled oats with 1 cup warm milk and let it sit for 10 minutes to soften and soak the oats.
  2. Activate Yeast: Dissolve 2 teaspoons active dry yeast in 1/4 cup warm water and add 1 tablespoon honey. Allow the mixture to sit for 5-10 minutes until it becomes bubbly and frothy, indicating the yeast is active.
  3. Combine Wet Ingredients: Add the softened oats, 1/4 cup melted butter, and 1/4 cup honey to the yeast mixture and stir until well combined.
  4. Mix Dry Ingredients: Gradually add 3 cups all-purpose flour, 1 teaspoon ground cinnamon, and 1/2 teaspoon salt to the wet ingredients. Stir until a shaggy dough forms.
  5. Knead Dough: Transfer the dough to a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Add extra flour a tablespoon at a time if the dough is too sticky.
  6. First Rise: Place the kneaded dough in an oiled bowl, cover with a damp cloth, and leave it in a warm place for 1 to 1.5 hours until it doubles in size.
  7. Shape and Second Rise: Punch down the risen dough, shape it into a log, and place it into a greased loaf pan. Let it rise again for 30-40 minutes.
  8. Bake: Preheat the oven to 375°F (190°C) and bake the bread for 30-35 minutes or until golden brown and sounds hollow when tapped.
  9. Cool: Remove the bread from the pan and cool completely on a wire rack before slicing.

Notes

  • Make sure the milk and water are warm, not hot, to avoid killing the yeast.
  • Kneading is essential for gluten development; don’t rush this step.
  • The honey not only sweetens but also helps yeast activation and browning of the crust.
  • Ensure proper rising times for light and fluffy bread.
  • Store bread in an airtight container to maintain freshness.
