Ingredients

Scale

Sweet Potatoes

  • 3 medium-sized sweet potatoes

Toppings

  • 1 cup feta cheese, crumbled
  • 2 tablespoons honey

Seasoning & Garnish

  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh herbs (thyme or rosemary), chopped

Instructions

  1. Preheat the oven. Set your oven to 400°F (200°C) to prepare for roasting the sweet potatoes.
  2. Prepare the sweet potatoes. Wash and peel the sweet potatoes, then slice them into 1/2 inch thick rounds to ensure even roasting.
  3. Toss with oil and seasoning. In a large bowl, coat the sweet potato rounds with olive oil, salt, and pepper, mixing thoroughly to ensure each slice is well seasoned.
  4. Roast the sweet potatoes. Lay the seasoned rounds in a single layer on a parchment-lined baking sheet. Roast for 25-30 minutes, flipping halfway through for uniform golden browning and tender texture.
  5. Mix the honey-feta topping. While the potatoes roast, crumble the feta cheese into a bowl and drizzle with honey, combining them into a creamy, sweet-savory mixture.
  6. Add topping to roasted rounds. After removing the sweet potatoes from the oven, allow them to cool slightly, then spoon and spread the honey-feta mixture evenly on each round.
  7. Finish roasting with topping. Return the topped rounds to the oven for another 5-7 minutes until the feta softens and becomes slightly melted and bubbly.
  8. Garnish and serve. Remove from the oven, sprinkle with fresh chopped herbs such as thyme or rosemary for added aroma and flavor, and serve the sweet potato rounds warm.

Notes

  • For a vegan version, substitute feta with a plant-based cheese and use maple syrup instead of honey.
  • Sweet potatoes can be left unpeeled for added texture and nutrients if preferred.
  • Adjust honey quantity depending on your preferred level of sweetness.
  • Fresh herbs can be varied or omitted according to taste.
  • Use parchment paper to prevent sticking and ease clean-up.
