Brownie
- 1/2 cup unsalted butter
- 6 ounces dark baking chocolate
- 1 1/4 cup white granulated sugar
- 1 cup all-purpose flour
- 2 large eggs
Mint Topping
- 2 1/2 cups powdered sugar
- 4 ounces cream cheese, softened to room temperature
- 4 tablespoons unsalted butter, softened to room temperature
- 1/2 teaspoon peppermint extract
- Gel mint green food coloring, a few drops
Chocolate Drizzle
- 2 ounces dark baking chocolate, melted
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with aluminum foil, leaving an overhang on two opposite sides for easy removal. Lightly grease the foil with a bit of batter or baking spray and set aside.
- Melt Butter and Chocolate: In a medium saucepan over medium heat, melt the 1/2 cup unsalted butter together with 6 ounces of dark baking chocolate, stirring constantly until the mixture is smooth and combined.
- Mix Brownie Batter: Remove the saucepan from heat. Stir in the white granulated sugar, all-purpose flour, and eggs until the batter is well mixed and smooth.
- Bake Brownies: Pour the batter into the prepared pan, spreading it evenly. Bake for 25-30 minutes or until the brownies just begin to pull away from the sides of the pan. Remove from oven and cool completely at room temperature.
- Prepare Mint Topping: In a large bowl, combine the powdered sugar, softened cream cheese, softened butter, peppermint extract, and a few drops of gel mint green food coloring. Beat at medium speed until creamy and smooth.
- Apply Topping: Spread the mint cream cheese frosting evenly over the cooled brownies.
- Drizzle Chocolate: Melt the 2 ounces of dark baking chocolate and drizzle it over the frosted brownies.
- Chill Brownies: Place the assembled brownies in the refrigerator to cool completely and set the topping for a few hours.
- Slice and Serve: Using the foil handles, lift the brownies out of the pan and cut into squares. Serve chilled or at room temperature for best taste.
Notes
- For sharper mint flavor, adjust peppermint extract to taste, but do not overdo as it may overpower the chocolate.
- If the frosting is too thick, add a teaspoon of milk to loosen it slightly.
- Use high-quality dark chocolate for a richer brownie base.
- To store, keep brownies refrigerated in an airtight container for up to 4 days.
- Allow brownies to come to room temperature before serving for the best texture and flavor.
