4.9 from 143 reviews

Irresistible Korean Cheese Hotteok is a delightful street food treat featuring a soft, chewy potato-based dough filled with gooey mozzarella cheese. This recipe combines the lightness of steamed potatoes with the crispiness achieved through pan-frying, making it a perfect sweet and savory snack or dessert that’s both satisfying and easy to prepare.

Ingredients

Scale

For the Potato Dough

  • 300 g medium-sized potato
  • 23 tbsp rice flour
  • 1 tbsp sugar
  • ¼ tsp salt

For Filling and Cooking

  • Shredded mozzarella cheese (enough for filling each hotteok)
  • 12 tbsp oil for frying

Instructions

  1. Prepare the Potato Dough: Peel and chop the potatoes, then steam them until they are completely soft. Once steamed, mash the potatoes thoroughly and mix in the rice flour, sugar, and salt until a smooth, pliable dough forms.
  2. Shape the Hotteok: Divide the dough into equal portions. Flatten each portion slightly in your palm, place a generous amount of shredded mozzarella cheese in the center, then carefully wrap the dough around the cheese and seal it tightly. Flatten the sealed dough ball gently to form a disc shape.
  3. Cook the Hotteok: Heat oil in a pan over medium heat. Place the formed hotteok discs into the pan and reduce the heat to low-medium. Fry them slowly for about 10-12 minutes, flipping occasionally, until they become golden brown and crispy on the outside while the cheese inside melts perfectly.

Notes

  • Use medium heat to fry to ensure the dough cooks through without burning the exterior.
  • You can substitute mozzarella with other melting cheeses like cheddar or a mix for added flavor.
  • Ensure the dough is sealed tightly to prevent cheese from leaking during cooking.
  • Serve hot for the best gooey cheese experience.
  • Rice flour helps achieve the chewy texture characteristic of Korean hotteok.
