Instructions

  1. Prepare the Tray: Line a baking tray with greaseproof paper and set aside to keep the truffles from sticking later.
  2. Crush the Cookies: Place the cookies in a food processor or blender and pulse until crumb-like. Alternatively, crush them using a rolling pin in a sealed bag if no electric mixer is available.
  3. Mix with Cream Cheese: Transfer cookie crumbs to a large bowl and add the dairy-free cream cheese. Mix thoroughly until the mixture is sticky and holds shape when squeezed into balls.
  4. Form Snowman Shapes: Using clean hands, weigh out 20g of the mixture for the larger ball and 7g for the smaller ball. Roll into balls and stack the smaller ball on top of the larger one to form snowmen. Place on the prepared tray. Repeat for the remaining mixture.
  5. Freeze to Set: Place the tray in the freezer for about 20 minutes or until the snowmen are firm to touch.
  6. Melt the Chocolate: About 5 minutes before the snowmen are ready, melt the dairy-free white chocolate in a bowl over a saucepan of simmering water (bain-marie) or in short bursts in the microwave until smooth.
  7. Coat the Snowmen: Remove the snowmen from the freezer. Using a toothpick or fork, dip them into the melted white chocolate to coat fully. Allow excess chocolate to drip off. For a thicker coating, repeat dipping once more. Place coated snowmen back on the lined tray.
  8. Set the Coating: Return the tray to the freezer for 5-10 minutes to set the chocolate coating quickly.
  9. Prepare Decorations: Color some leftover white chocolate with black and orange food gels. Transfer each into piping bags fitted with small tips for detailed decoration.
  10. Decorate Snowmen: Pipe orange ‘carrot noses’ on each snowman, then add black eyes, mouths, and buttons with black chocolate. Cut strawberry laces to size and wrap them around the snowmen’s necks as scarves, using a small amount of melted white chocolate to secure if needed.
