  • 500g carrots, cut into batons

Instructions

  1. Prepare Peas and Ingredients: Defrost 400g of frozen peas completely to ensure a smooth blend. Gather fresh mint leaves, chop a small red chilli, and measure out the other ingredients like yogurt, lemon juice, and ground cumin.
  2. Blend the Dip: In a food processor, combine the defrosted peas, 100g fat-free natural yogurt, juice of one lemon, 1 teaspoon ground cumin, fresh mint leaves, and chopped red chilli. Whizz together until the mixture reaches your desired texture, whether slightly chunky or smooth.
  3. Serve or Store: Transfer the pea dip into a serving bowl or divide it into plastic tubs if packing for lunchboxes.
  4. Toast the Pitta: Lightly toast 4 wholemeal pitta breads until crisp and warm. Then cut them into wedges for easy dipping.
  5. Prepare the Carrots: Cut 500g carrots into baton shapes, providing a crunchy and healthy accompaniment to the dip.
  6. Present and Enjoy: Serve the pea dip alongside the toasted pitta wedges and carrot batons for a colorful and nutritious snack or light meal.
