Ingredients

Scale

Meat and Seasoning

  • 2 lbs ground beef
  • 2 packets taco seasoning blend
  • ½ cup water
  • 1 can (4 oz) diced green chilies

Cheese

  • 3 cups shredded Colby Jack cheese, divided

Crust & Preparation

  • Pizza crust prepared to fit a 15×10 inch baking sheet
  • Cornmeal for dusting the baking sheet

Toppings

  • Fresh romaine lettuce, shredded
  • Diced tomatoes
  • 1 small red onion, finely chopped
  • 1 cup sliced black olives

Instructions

  1. Prepare the crust: Preheat your oven to 425°F (220°C). Lightly dust a 15×10 inch baking sheet with cornmeal to prevent sticking. Roll out or place your prepared pizza crust onto the baking sheet, shaping it evenly to fit.
  2. Cook the beef: In a large skillet over medium heat, brown the 2 lbs of ground beef until no longer pink, breaking it apart as it cooks. Drain excess fat.
  3. Add seasoning: Stir in the 2 packets of taco seasoning blend, ½ cup water, and the 4 oz can of diced green chilies into the cooked beef. Simmer for 5-7 minutes until the mixture thickens and flavors are well combined. Remove from heat.
  4. Assemble the pizza base: Spread a thin, even layer of the seasoned beef mixture over the prepared crust. Sprinkle 2 cups of shredded Colby Jack cheese evenly on top of the beef layer.
  5. Bake: Place the pizza in the preheated oven and bake for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbling.
  6. Add fresh toppings: Once baked, remove the pizza from the oven and allow it to cool slightly. Evenly distribute shredded romaine lettuce, diced tomatoes, finely chopped red onion, and sliced black olives over the top. Sprinkle the remaining 1 cup of Colby Jack cheese on top if desired for extra cheesiness and serve immediately.

Notes

  • Use a thin or medium crust pizza base for best results to ensure it bakes evenly.
  • If fresh romaine lettuce isn’t available, crisp iceberg lettuce can be used as a substitute.
  • You can add sour cream or salsa on the side for dipping or topping the pizza slices.
  • For a spicier version, add jalapeños or hot sauce to the beef mixture.
  • Make sure to drain cooked beef well to avoid greasy pizza.
