Ingredients

Scale

Pizza Dough

  • 1 package refrigerated pizza dough (or homemade pizza dough)

Filling

  • 1 1/2 cups marinara sauce or pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup pepperoni slices (or your choice of toppings such as sausage, mushrooms, bell peppers, olives)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)

Finishing

  • Olive oil for brushing (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to ensure a hot environment for baking the pot pies evenly and properly.
  2. Prepare ramekins: Lightly grease 4-6 small ramekins or oven-safe bowls depending on their size to prevent sticking during baking.
  3. Roll out dough: On a lightly floured surface, roll out the pizza dough to about 1/8 inch thickness to create a thin but sturdy crust.
  4. Cut dough shapes: Cut the dough into circles or squares that will fit inside your ramekins with about one inch of dough hanging over the edges to seal the filling later.
  5. Form crusts: Gently press the dough pieces into the bottoms and sides of each ramekin, creating a crust base and walls to hold the filling.
  6. Add sauce: Spoon approximately 2 tablespoons of marinara or pizza sauce into the bottom of each crust, spreading evenly.
  7. Add cheese: Sprinkle 2-3 tablespoons of shredded mozzarella cheese over the sauce layer in each ramekin.
  8. Add toppings: Place a few slices of pepperoni or your choice of other toppings such as mushrooms or bell peppers over the cheese.
  9. Season the filling: Sprinkle grated Parmesan, dried oregano, basil, garlic powder, and optional red pepper flakes over the toppings to enhance flavor.
  10. Top with extra cheese and seal: Add more mozzarella cheese on top, then fold the overhanging dough over the filling to partially cover it, sealing in the ingredients.
  11. Brush with olive oil: Optionally, brush the dough tops with a little olive oil to promote a golden, crispy crust.
  12. Bake the pot pies: Arrange the ramekins on a baking sheet and bake in the preheated oven for 20-25 minutes, until the dough is golden brown and the cheese is melted and bubbly.
  13. Cool before serving: Let the pot pies cool for 5 minutes after baking to allow them to set and be easier to handle.
  14. Serve: Serve the pizza pot pies hot, optionally with extra marinara sauce on the side for dipping.

Notes

  • Feel free to customize the toppings according to your taste preference or dietary restrictions.
  • If using homemade dough, ensure it is well chilled for easier handling when rolling out.
  • To make cleaning easier, place ramekins on a baking sheet before placing in the oven.
  • For crispier crust, you can pre-bake the crusts for 3-4 minutes before adding the filling.
  • Allow pies to cool slightly before removing from ramekins to avoid burns.
