  • 1 1/4 cup Almond Flour
  • 2 Tbsp Pure Maple Syrup
  • 2 Tbsp Cashew Butter
  • 1 tsp Vanilla Extract
  • 1/3 cup Mini Chocolate Chips (Semi-Sweet)

Instructions

  1. Prepare the brownie base: Pit the Medjool dates and place them in a food processor. Blend until a sticky paste forms. Add almond flour, chocolate protein powder, cocoa powder, pure maple syrup, and vanilla extract. Process until well combined and the mixture comes together into a thick brownie dough.
  2. Press brownie base into pan: Line an 8×8 inch baking pan with parchment paper. Spread the brownie base evenly across the bottom, pressing firmly to create a compact layer. Place it in the refrigerator to set while preparing the cookie dough layer.
  3. Make the cookie dough layer: In a mixing bowl, combine cottage cheese, vanilla protein powder, almond flour, maple syrup, cashew butter, and vanilla extract. Mix thoroughly until smooth and creamy. Fold in the mini semi-sweet chocolate chips evenly throughout the dough.
  4. Assemble the brownies: Remove the brownie base from the refrigerator. Spread the cookie dough layer evenly over the top of the brownie base, smoothing the surface with a spatula.
