Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the tops off the garlic bulbs to expose the cloves inside, drizzle with olive oil, wrap them tightly in foil, and roast for 30 minutes until the garlic is golden, soft, and aromatic.
  2. Sauté the Aromatics: While the garlic roasts, heat a little olive oil in a large pot over medium heat. Add the chopped onions and cook for 5 to 7 minutes until they become translucent and release their fragrant aroma.
  3. Add Broth and Herbs: Carefully squeeze the roasted garlic cloves out of their skins into the pot with onions. Add the vegetable or chicken broth along with the fresh thyme sprigs. Stir gently and bring to a gentle simmer.
  4. Simmer: Allow the soup to simmer lightly for 15 to 20 minutes. This slow simmer develops the flavors, melding the roasted garlic and herbs beautifully.
  5. Blend: Remove the thyme sprigs from the pot. Using an immersion blender, puree the soup until smooth and creamy. Alternatively, carefully transfer the soup in batches to a regular blender and blend until smooth.
