Ingredients

Scale

Main Ingredients

  • 1 lb chicken breasts, sliced
  • 1 lb broccoli, rinsed and cut into florets

Sauce Ingredients

  • 2 cups heavy whipping cream
  • 1 cup low-sodium chicken broth
  • 5 oz freshly shredded Parmesan cheese
  • 1 tbsp butter, diced

Seasonings

  • 2 tbsp Cajun seasoning
  • 2 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp red chili pepper flakes
  • ½ tsp salt
  • ½ tsp black pepper

Garnish

  • 1 tbsp fresh parsley, chopped

Instructions

  1. Prepare the chicken: Slice the chicken breasts into even pieces to ensure uniform cooking. Season the slices with Cajun seasoning, garlic powder, salt, and black pepper, coating each piece thoroughly.
  2. Add ingredients to slow cooker: Place the seasoned chicken slices into the slow cooker. Add the minced garlic, diced butter, heavy whipping cream, low-sodium chicken broth, and red chili pepper flakes on top. Stir gently to combine the liquids and seasonings.
  3. Cook: Cover the slow cooker and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  4. Add broccoli and cheese: About 30 minutes before serving, add the broccoli florets and freshly shredded Parmesan cheese to the slow cooker. Stir well to combine and cover. Continue cooking until broccoli is tender but still bright green, and the cheese has melted.
  5. Finish and garnish: Once cooking is complete, give the sauce a gentle stir to integrate all the flavors. Serve the chicken Alfredo hot, garnished with freshly chopped parsley for a pop of color and freshness.

Notes

  • You can substitute heavy cream with half-and-half for a lighter version but the sauce may be less rich.
  • If you prefer less spice, reduce or omit the red chili pepper flakes.
  • For a thicker sauce, remove the lid in the last 30 minutes to let some liquid evaporate.
  • Serve over cooked pasta, rice, or cauliflower rice for a complete meal.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated gently on the stove or microwave.
