Ingredients

Scale

Beef and Seasoning

  • 3 pound chuck roast
  • 4 tbsp SPG (salt, black pepper, garlic powder blend)
  • 1 cup beef broth
  • Barrel aged beer for spritzing (about 1 cup)

Buns and Cheese

  • 2 packages of sweet slider buns (usually about 1216 buns)
  • 8 slices sharp cheddar cheese

Additional Ingredients

  • ½ cup BBQ sauce
  • 1 large white onion, thinly sliced
  • Avocado oil for frying onions
  • Garlic butter for brushing on buns

Instructions

  1. Preheat and Prepare Smoker: Preheat your smoker to 275° F and prepare to smoke using hickory wood for a bold, smoky flavor that will permeate the beef.
  2. Season the Chuck Roast: Generously season the chuck roast on all sides with the SPG blend (salt, black pepper, garlic powder) ensuring even coverage for maximum flavor.
  3. Smoke the Chuck Roast: Place the seasoned roast on the smoker rack at 275° F. Smoke for 5 hours, spritzing every hour with barrel aged beer to keep the meat moist and flavorful.
  4. Wrap and Continue Smoking: After 5 hours, tightly wrap the chuck roast in aluminum foil and return it to the smoker. Continue cooking for an additional 2 hours.
  5. Check for Doneness: Remove the roast once it reaches an internal temperature of 205° F and is tender when pierced, indicating it’s ready to be shredded.
  6. Rest the Meat: Place the foil-wrapped roast into a cooler or an insulated container and let it rest for 2 hours. This rest period allows juices to redistribute, keeping the beef moist.
  7. Shred the Beef: Unwrap the rested roast and shred the beef using forks or your hands, separating it into tender strands perfect for sliders.
  8. Caramelize the Onions: Heat avocado oil in a pan over medium heat. Add the thinly sliced large white onion and cook for 5-7 minutes until they soften and begin to caramelize.
  9. Assemble the Sliders: In an aluminum foil pan, place the bottom halves of the slider buns. Layer with 4 slices of sharp cheddar cheese, then add the shredded beef, drizzle ½ cup of BBQ sauce evenly over the meat, top with caramelized onions, and add the remaining 4 slices of cheese. Finally, place the top halves of the buns onto the sliders and brush them generously with garlic butter.
  10. Bake the Sliders: Place the assembled sliders in a 350° F oven and bake for 15-20 minutes until the cheese has melted completely and the sliders are heated through.
  11. Serve: Slice the sliders as needed and serve immediately while warm. Enjoy the rich, smoky, cheesy goodness!

Notes

  • Spritzing the roast with barrel aged beer during smoking helps maintain moisture and adds an extra layer of flavor.
  • Resting the roast after smoking is crucial for juicy and tender meat.
  • Use sharp cheddar cheese for a nice tangy contrast to the smoky beef and sweet onions.
  • The garlic butter brushed on the buns adds a wonderful aroma and taste to the finished sliders.
  • These sliders can be made ahead; keep warm in the oven on low or reheat gently to retain moisture.
