Instructions

  1. Crush Oreos: Place Golden Oreo Thins in a food processor and pulse until finely crumbled with a sand-like texture.
  2. Combine Ingredients: In a large bowl, mix the Oreo crumbs and softened cream cheese, stirring until a soft, cohesive dough forms.
  3. Color Dough: Divide the dough into two equal parts. Add the green food coloring to one half and blend thoroughly until fully colored.
  4. Form Balls: Split each dough portion into 12 small pieces. Roll one green and one yellow piece together by hand to create a marbled ball.
  5. Prepare for Pops: Place the balls on a parchment-lined cookie sheet. Make a small indent on top of each ball using a spoon, then insert a popsicle stick or rod into the center.
  6. Freeze: Freeze the Oreo pops for about 20 minutes to firm them up before dipping.
  7. Melt Chocolate: In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between, until smooth and fully melted.
  8. Dip Pops: Holding each ball by the stick, dip it into the melted chocolate to coat completely. Let excess chocolate drip back into the bowl, then return to the parchment paper.
  9. Decorate: Before the chocolate hardens, top each pop with rainbow gummy candies and sprinkle with gold sprinkles.
